This rice used to be my favorite rice ever! Maybe add some avocadoes on the sides and let me know in the comments below how your Caribbean vegetable rice came out!

Slice 2 whole tomatoes and chop them using the Nutri Chopper and place them into a bowl. Take 1/2 an onion and 1 green bell pepper, slice them, chop them using the Chopper, and place them into a separate bowl from the tomatoes. (Links in the notes below the recipe)

Take your 1 cup of parsley and chop them using the Hamilton Beach FreshChop. Once done, place them into the same bowl with the onions and bell pepper.

Take your Instant Pot and press the ‘Sauté’ button on the pot and ‘Adjust’ to Normal. Add around 1-2 small cups of oil and wait until it’s hot. Once hot, add your box of Plant-Based Ground into the pot and stir.

Then, add 3 tablespoons of Haitian Epis Spice, 4 drops of oregano ground, 7 drops of basil leaves, 1 tablespoon of Pink Himalayan Salt, 3 drops of cayenne pepper, 1/4 tablespoon of ground cloves, and mix all in the Instant Pot.

Now, add the desired amount of mixed vegetables, sweet peas, and super sweet corn and stir. Add more oil if needed and always make sure to taste. Then add 2 bottle tops of Apple Cider Vinegar and your 1 cup of raw cashews and mix. Let it fry for about 5 minutes but don’t let it get burnt.

Then add 5 small measuring cups of water, stir, and taste for salt. Let it boil for about 5 minutes, and in the meantime, wash your 5 small measuring cups of rice in a bowl.

Take your bowl of onions, parsley, and bell peppers, and put half of it into the instant pot, stir, and add your 5 small measuring cups of rice, mix, and level it with the water. Set your Instant Pot on Multigrain and steam for 20 minutes.

Once is done steaming, you can take your pot of rice and place it into a different bowl or pot so you can use the Instant Pot to fry some things if you only have 1 Instant Pot. Now, add around 1-2 small measuring cups of oil and wait until it’s hot.

Then crack 8 eggs into the pot and keep stirring. Now, add your whole bowl of diced onions, bell peppers, and parsley, and your bowl of diced tomatoes and mix. And add 1/4 tablespoon of salt for taste, mix, and add your bowl or pot of rice and mix well.
