The unique thing about this recipe that it is made out of chicken strips, potatoes, and goya pigeon peas, and tastes REALLY good.

Peel 3 potatoes and slice them into smaller pieces. Chop the potatoes with the Nutri Chopper or manually yourself. And place into a bowl.

Then, wash 2 full tomatoes and slice them, and also wash 2 green onions and dice them. After your done, chop them in the Nutri Chopper, and place them into a separate bowl from the potatoes.

Then, take your 1/4 cucumber, slice them, chop them in the Nutri Chopper, and place them into the same bowl with tomatoes and green onions. Take your bowl of diced potatoes and wash them

Take your Instant Pot and press on Sauté. Then pour 2 small measuring cups of oil, and wait until it’s hot. Once hot, put your diced green onions in there and fry.

And put your 1 cup of grilled chicken breast strips, 2 cups of Goya pigeon peas, then start stirring, and fry for one minute.

Now put 1 tbsp of Haitian Epis Spice, 1 tbsp of ground cloves, 6 drops of ground Oregano, 6 drops of basil leaves, 1 tbsp of ground pink salt, 3 bottle tops of apple cider vinegar, 3 drops of cayenne pepper, and mix. Fry until it gets dark or brown.

In the meantime, peel and smash 8 cloves of garlic, and put your smashed garlic in the Instant Pot, and stir. Add 3 tbsp of pasta sauce.

Wash 3 cups of brown rice, and pour the 3 cups of brown rice into the pot, and put one handful of parsley. Add 3 cups of water into the pot, and mix.

Cover with Instant Pot Top, and Steam for 20 minutes, on Multigrain. When done, release the pressure. Transform your rice into a different bowl, so you can use the Instant Pot.

Set your Instant Pot on Sauté, and pour 1 cup of olive oil, and wait until hot. Pout your bowl of diced potatoes in there, and mix.

Add the desired amount of parsley flakes, and stir. Then, add 1 tbsp of honey (optional), and stir. Leave it to fry for potatoes to cook. Put your bowl of diced tomatoes and cucumbers in there, and crack 5 eggs in there, and let it fry. Stir.

You can now add your bowl of rice and mix. Finally, your Chicken and Potato Fried Rice are ready! Serve with avocadoes on the side.
